CARROT, GINGER & PECAN
Following the basic cupcake recipe replace vanilla extract with 2 tsp ground ginger and replace caster sugar with brown sugar. Add ½ cup chopped pecans and 1 small, peeled, finely grated carrot. To make a cream cheese frosting, replace butter in basic buttercream recipe with cream cheese. Serve sprinkled with a pinch ground cinnamon and pecan nut halves.
