ONE-PAN LOVELY LEGS & ASPARAGUS

• 1kg chicken lovely legs

• 500g chat potatoes, halved

• 2 cloves garlic, sliced

• 2 tbsp olive oil

• 1 bunch asparagus, trimmed

• 250g cherry tomatoes

• 1 zucchini, chopped

• 2 tbsp balsamic vinegar

• basil leaves, crusty bread, to serve

1 Preheat oven to 200ºc.

2 In a large roasting dish, combine chicken, potatoes and garlic. Toss in oil and season. Bake 35 mins, turning halfway.

3 Add asparagus, tomatoes and zucchini to dish. Toss in pan juices and drizzle with vinegar. Bake a further 10 mins until chicken is completely cooked through.

4 Scatter over basil leaves to serve. Accompany with crusty bread.

TIP Chicken lovely legs are drumsticks that have been skinned and trimmed, with knuckle ends removed. They can be replaced with skinless chicken thigh cutlets, if preferred.
