AFFOGATO-STYLE BROWNIES
MAKES 4 PREP 10 MINS COOK 15 MINS
• 1 cup caster sugar
• ¼ cup water
• 50g butter, chilled, chopped
• 2 cups plain popcorn
• 1 tsp instant coffee granules
• 4 ready-made chocolate brownies
• Salted caramel ice-cream, espresso, to serve COFFEE SAUCE
• 1 cup brown sugar
• 1 cup cream
• 60g butter
• 2 tsp instant coffee granules
1 In a medium saucepan, combine sugar and water. Stir over low heat until sugar dissolves. Bring to boil. Boil 6-8 mins, without stirring, until
mixture turns lightly golden.
2 Add butter, swirling pan to combine. Fold through popcorn and spread over a lined oven tray. Sprinkle with coffee. Cool, then break into small clusters.
3 COFFEE SAUCE In a saucepan, combine all ingredients. Stir over low heat until dissolved. Increase heat to medium. Simmer 3-5 mins until sauce thickens and darkens in colour.
4 Wrap each brownie in plastic wrap. Microwave in 30-sec bursts until warm.
5 Top each brownie with ice-cream. Drizzle with sauce and scatter with popcorn clusters. Serve with coffee.
