PARMIGIANA MEATBALLS

SERVES 4 PREP 10 MINS COOK 20 MINS

• 500g beef mince

• ½ cup fresh breadcrumb­s • 1 onion, grated

• ½ cup parsley leaves, chopped, plus extra to serve

• 1 egg, lightly beaten

• ¼ cup grated parmesan

• 2 cloves garlic, crushed

• 1 tbsp olive oil

• 1 cup tomato passata

• 1 cup grated mozzarella • steamed green beans, to serve

1 Preheat oven grill to 180°C.

2 In a large bowl, combine mince, breadcrumb­s, onion, parsley, egg, parmesan and garlic. Season to taste and mix well.

3 Roll heaped tablespoon­s of mixture into rough balls. Arrange on tray and chill until required.

4 In a large ovenproof frying pan, heat oil on high. Cook meatballs 4-5 mins, turning on all sides until evenly browned.

5 Pour over passata and bring to a simmer. Cook 1-2 mins, stirring.

6 Sprinkle cheese evenly over meatball mixture. Place under hot grill, in middle shelf of oven, and grill 4-5 mins until cheese is melted and lightly golden. Top with extra parsley and serve with beans.
