MACADAMIA & MARMALADE CAKE

SERVES 12 PREP 20 MINS COOK 30 MINS

• 2/3 cup self-raising flour, sifted

• ½ cup fine semolina

• ½ cup almond meal

• 150g butter, melted

• ½ cup caster sugar

• 2 eggs

• ½ cup buttermilk

• ½ cup orange marmalade

• 1 cup macadamias, roughly chopped

1 Preheat oven to 180ºc. Lightly grease and line a 22cm square cake pan with baking paper.

2 In a medium bowl, combine flour, semolina and almond meal. Make a well in the centre.

3 In a large jug, combine butter and sugar, whisking to dissolve. Whisk in eggs and buttermilk. Pour into dry ingredient­s with marmalade. Mix lightly. Pour into pan, smoothing surface. Scatter nuts evenly over top.

4 Bake 25-30 mins until a skewer inserted in the centre comes out clean and dry.

5 Cool in pan 10 mins. Transfer to a wire rack to cool completely. Cut into squares.
