KIWIFRUIT & BANANA SMOOTHIE PIKELETS

A fruity twist on a classic favourite

MAKES 20 Place one of three Zespri Sungold kiwifruit (peeled, finely diced) into the jug of a high-speed blender, then add ½ roughly chopped banana, ½ cup milk, ¼ cup of plain Greek-style yoghurt, 1 egg,

1 cup wholemeal self-raising flour and 1 tbsp honey. Blitz to make a smoothie. Heat a large frying pan over medium heat.

Brush with butter and a little drizzle of extra-virgin olive oil. Spoon tablespoon­s of batter into the pan (cook about 4 at a time) – allow room for batter to spread. Top each with 2-3 pieces of remaining Zespri kiwifruit. Cook 1-2 mins until bubbles begin to appear on the surface. Flip and cook a further 1 min until golden. Repeat. Serve pikelets warm or at room temperatur­e topped with remaining Zespri Sungold kiwifruit and a drizzle of honey.
