Delicious salmon

A healthy and refreshing dish packed with flavour

SERVES 4

Preheat oven to 200°C. Season 4 skinless salmon fillets with salt, freshly ground black pepper and a sprinkle of sweet paprika. Heat a splash of olive oil in a small non-stick frying pan over medium heat. Lightly brown salmon fillets on each side, then place them in a deep ovenproof dish. Combine 2 small roughly chopped red chillies, 2 tbsp coriander (roots and stems), 3 garlic cloves and 1 lemongrass stalk (white part only) in a small blender and blend until finely chopped. Add ½ cup fish stock, ¼ cup fish sauce, 2 tbsp soy sauce, juice of 1 large lime and

1 tsp brown sugar. Blend until well combined. Pour sauce over salmon, top with ginger slices cut into strips (from a 2cm knob of ginger) and bake 10 mins or until cooked to your liking. Serve salmon on a bed of rice, topped with the coriander leaves and 1 finely chopped mild long red chilli.
