ZUCCHINI CARBONARA

SERVES 4 PREP 5 MINS COOK 10 MINS

• 500g spaghetti

• 4 zucchini, 2cm pieces

• 4 rindless bacon rashers, finely chopped

• 4 eggs

• ¾ cup cream

1 In a large saucepan of boiling, salted water, cook pasta following packet directions.

2 Meanwhile, in a large frying pan, heat a splash of olive oil on high. Saute zucchini 3-4 mins until golden. Add bacon, and cook 2-3 mins until crispy.

3 In a large jug, whisk eggs and cream together. Season.

4 Drain pasta and return to pan. Toss zucchini and bacon mixture through hot pasta with egg mixture until well combined.

5 Serve pasta sprinkled with sprigs of parsley and shaved parmesan, if liked.
