3 WAYS WITH KEBABS!

PORK, APPLE & SAGE KEBABS SERVES 4 PREP 15 MINS + MARINATING

COOK 10 MINS

• 750g pork loin steaks, cut into 3cm cubes

• ¼ cup olive oil

• 1 tbsp shredded sage

• 2 tsp fennel seeds, roughly crushed

• 2 large red onions, each cut into 12 wedges

• 2 red apples, each cut into 8 wedges

• 8 metal skewers SALAD

• 3 cups shredded red cabbage

• ¼ cup toasted walnuts, chopped

• 2 tbsp olive oil

• 1 tbsp lemon juice

• 2 tbsp fried sage leaves

1 In a bowl, combine pork, half the oil, sage and fennel seeds. Marinate 30 mins.

2 Thread pork, onion and apple onto skewers. Brush with remaining oil. Season.

3 Preheat chargrill pan or barbecue on high. Cook kebabs 8-10 mins turning on all sides until pork is evenly cooked.

4 SALAD In a large salad bowl, toss cabbage and walnuts together. Season. Combine oil and juice. Serve skewers with salad, dressing and topped with sage.
