ENCHILADA PASTA BAKE
SERVES 4 PREP 10 MINS COOK 15 MINS
• 625g pre-made packet ham and cheese tortellini
• 375g bottle enchilada sauce
• 35g packet taco seasoning
• 1 cup grated pizza cheese
• 175g packet corn chips
1 Preheat oven to 200°C. Lightly grease an 8-cup casserole dish.
2 In a large saucepan of boiling water, cook tortellini 3 mins. Drain. Transfer tortellini to dish. Stir enchilada sauce and taco seasoning through. Top with half the grated cheese. Bake 5 mins.
3 Remove from oven. Push corn chips into tortellini mixture. Sprinkle remaining cheese over. 4 Bake a further 4-5 mins until cheese melts and bake is golden brown. Serve sprinkled with parsley and accompany with a mixed salad, if liked.
