CHRISTMAS CHAI MIX
MAKES 3½ CUPS PREP 25 MINS COOK 5 MINS

8 cinnamon sticks
• ½ cup star anise
•
2 tbsp fennel seeds
• 1 tbsp coriander seeds
• 1 tbsp cardamom pods
• 3 tsp cloves
•
2 tsp black peppercorns
•
1/3 cup chopped naked ginger
• 1½ cups Darjeeling tea leaves
1 Preheat oven to 200°C. 2 On a large lined baking
tray, combine spices. Cook 5 mins or until fragrant. Cool. Transfer to food processor and pulse until coarsely chopped, or pound in a mortar with a pestle for a similar result. Transfer to a large bowl. Stir in ginger and tea leaves. 3 Divide among jars.
