CHRISTMAS GRANOLA SNACK MIX

MAKES 15-20 CUPS PREP 45 MINS + CHILLING COOK 1 HOUR 10 MINS

• 125g unsalted butter, chopped, at room temperatur­e

• ½ cup demerara sugar

• ¼ cup almond meal

• 1 cup plain flour, sifted

• 2 tsp ground ginger

• 11/2 tsp ground cinnamon GRANOLA

• ½ cup honey

1/3 cup coconut oil

• 2 tsp vanilla bean paste

• 4 cups rolled oats

• 1 cup pecans

• 1 cup natural almonds

• ½ cup brown sugar

• 2 tsp ground cinnamon

1 To make stars, line two large baking trays with baking paper.

2 Preheat oven to 180°C. In mixing bowl, beat butter and sugar with

electric hand mixer until pale and creamy. Stir in almond meal, flour, ginger and spice to form soft dough. Wrap in cling film. Refrigerat­e 30 mins.

3 Roll out dough between 2 sheets baking paper to 5-6mm thickness. Using 4cm star cutter, cut out stars. Put on the tray 2cm apart, to allow for spreading. Bake 15 mins or until golden around edges. Cool on trays.

4 GRANOLA Line 2 baking trays with baking paper. Reduce oven to 170°C. In a small saucepan, melt honey, oil and paste over medium-low heat. In a large bowl, stir to combine oats, nuts, sugar and cinnamon. Add honey mixture. Mix well. Drop heaped teaspoon of mixture on trays in batches. Bake 25 mins (don’t stir) or until crunchy. Cool on trays.

5 Spoon granola into jars or sealable gift packets with biscuits.
