Broc­coli toasties

In the spirit of get­ting you guys eat­ing more greens, here are my awe­some broc­coli toasties! I love this recipe be­cause it’s truly fool­proof and can be used with a va­ri­ety of dif­fer­ent top­pings.


◆ 4 eggs, beaten

◆ ½ head of broc­coli, grated

◆ 55g (½ cup) al­mond meal

◆ 55g (½ cup) lin­seed meal

◆ Pinch of sea salt


◆ Smoked salmon

◆ Av­o­cado slices

◆ Le­mon-macadamia ri­cotta

◆ Herbs or salad leaves

◆ Sliced tomato

◆ Squeeze of le­mon juice

1. Pre­heat the oven to 180°C and line a bak­ing tray with bak­ing pa­per.

2. In a bowl, mix all the in­gre­di­ents to­gether to form a dough. Trans­fer to the bak­ing tray and, us­ing your fin­gers, press it out into a rec­tan­gle about 1cm thick.

3. Bake in the oven for 30 mins, or un­til golden brown and cooked through. Re­move from the oven and leave to cool com­pletely, then slice into six pieces.

4. To serve, load up the broc­coli toasties with the top­pings in any or­der you like, or use your own favourite top­pings. En­joy!
