Don’t have ice­block moulds handy? Mini muf­fin tins or used yo­ghurt con­tain­ers work a treat, too. Just put your pop sticks in when the mix­ture is par­tially frozen and shake the ice­blocks free when set. And for blocks that don’t drip one bit (se­ri­ously!) try this se­cret in­gre­di­ent: gelatin. It’ll help them hold their shape, with­out chang­ing the taste. Win.
