The oldest edible cheese
Sold in Valtellina Valley, Italy, Bitto Storico is still made in the same way it has been for centuries. The cheese contains cow’s milk and 10 to 20 percent Orobica goat’s milk, which is produced in the Bergamo Alps of northern Italy. Although the majority of Bitto Storico on the market is between five and 10 years old, the cheese can be aged up to 18 years.
