Avani Gaborone presents Chef Melisa

ChefMeliss­a Ngoni continues to serve her mouth- watering meals, and she says that perfection for culinary keeps her going.

“It’s that quest for perfection that drives me in everything I do. A kitchen is a high- pressurize­d environmen­t that functions on perfection and outstandin­g healthy tips, therefore this helps define culinary,” she said.

Just recently this renowned chef went all out in collaborat­ion with Avani Gaborone Resort & Casino to introduce a new menu. The extraordin­ary activity was one of a kind, and captivated most of the people who experience­d the offering. As Chef Melissa served her different menus, the hotel saw it fit to take the menus for tasting before becoming one of Avani’s regular and official menus. The activity was dubbed ‘ Avani Lifestyle presents Taste sensations with Chef Melissa’. The initiative was to introduce and launch Ngoni, otherwise nicknamed Chef Bae.

On that chilly day, the good chef prepared different menus including: Thai meatballs with rice noodles, crispy fish fillet with a green Thai sauce and salad, Thai prawn and chicken curry served with fragrant basmati rice, chicken biryani and quinoa stir- fry. For the desert, she treated people with her delicious soft baked cheese cake.

Many agreed that the good chef indeed tickled their palates, as well as satisfied their cravings with those well- prepared unique meals. Lovers of basmati rice agreed that Avani could have the best of it, if Chef Melissa’s menus could quickly be included. “I opted for Biryani, which I wiped off in seconds, and we had my favourite, cheese cake for dessert. I was impressed,” said one of the tasters of the meals of the day. “It was the Thai prawn and chicken for me, I have never had amazing prawns like those and I would always choose Chef Melisa’s prawns because they have a different taste and flavour,” said another one of the packed yummy meals, courtesy of Avani and Chef Melissa.

Chef Mellisa tells BG Style that her secret to achieving her best flavours is the fact that she cannot serve when it’s not perfect.

“I serve what I also can eat. I have to win all the time, and I am my personal brand,” she says. She adds that she does everything in her strength to protect her brand.

Ngoni is Avani’s Executive Chef. She has previously worked with another leading hotel in the city, a role she took up in June 2018. Ngoni is a seasoned chef, with a career spanning over a decade, and she possesses a ‘ hands on’ approach to all areas of the kitchen.

Ngoni is a highly motivated and capable profession­al cook with a real passion for preparing popular, healthy and nutritious meals. She has a background in conducting internal training for the kitchen brigade which produces high standards in Food hygiene and safety. In 2013 she took part in developing a program of Culinary Arts for Botswana‘ s Technical colleges.

She holds a Diploma in Food Principles and Practices of Culinary Arts from H. T. A School of Culinary Arts ( South Africa), Diploma in Food Preparatio­n and Culinary Arts ( British Council), Certificat­e in Food Preparatio­n and Culinary Arts ( British Council) among others.
