Delicious homemade scones

Home-made scones are always a yummy treat. Easy and simple to make, these scones are a winner.They will probably remind you of your mummy or grandmothe­r, and bring a flood of childhood memories when baked treats were prepared for visitors or holiday occasions, and the warm lovely smell would hit your nose and you would salivate quietly, waiting to bite into these scrumptiou­s baked goodies. The trick with the perfect scone is to ensure that it is not too soft and not too hard, and that you put just a little bit of sugar – not too much.

Preparatio­n time: One hour Serves: Six people

Ingredient­s:

* Plain or self-raising flour * A tablespoon of baking

powder

* A pinch of salt

* About 25g of sugar * About 50g of beaten up

unsalted butter

* About 150ml of milk * One egg, beaten, or plain four *to use to brush and dust the scones once they are baked)

Method:

1. Preheat the oven to 180C.

2. Mix the flour, baking powder and salt in a bowl. Then slowly stir in the sugar, then add the butter and rub into the flour to create a fine breadcrumb consistenc­y.

3. Add the milk, working the mixture smoothly to create a smooth dough.

4. Let the mixture rest for about 10 minutes.

5. Roll out the dough on a lightly floured work surface until it is 2cm in thickness. Use a pastry cutter (or the ring of a mug put upside down, which works just as well. He he he!) and cut the dough without twisting.

6. Once cut, you can brush the top of the scones with the egg (if you want them shiny) or the flour (if you prefer them matte).

7. Place the scones on a greased baking tray and bake in the pre-heated oven for about 15-20 minutes until they are golden brown.

8. Allow them to cool for a few minutes after that before munching away.That was easy, right? You can enjoy your scones plain or add cream and fresh berries on top. Mmmh… Delicious!
