Quick and Easy Chicken Chilli stew
Chicken soup is a hit in winter, but this stew can also be enjoyed in summer, because it has a great flavour and a heartiness that makes it perfect soul food.
What’s more, it cooks quite quickly – in less than half an hour, giving you enough time to focus on other chores and duties.To get the best out of this dish, use diced boneless chicken breasts or tenderloins, along with beans. For a yummy flavour, add garlic, pepper, onions and tomatoes. In fact, you can play around with different ingredients to get the best out of this dish. Round it off with a dash of some peppers for a tangy taste that lingers in the taste buds, and smells divine.

INGREDIENTS:
*Four cloves of minced garlic *One large pepper, finely chopped *One teaspoon of ground coriander *Two teaspoons of ground cumin *Two cans of diced tomatoes *Two cans of beans, drained *One medium lime or lemon *Two cups of corn
*A pinch of salt to taste
*A pinch of freshly ground pepper
to taste
*Half a cup of sour cream
*A quarter cup of red onion *A quarter cup of shredded cheddar

DIRECTIONS:
1. Pat the chicken dry and cut it into bite-size cubes and set aside.
2. *Take the chopped onions and put them in heated olive oil in a large non-stick saucepan, over medium-high heat.Add the minced garlic and sauté for about 3-4 minutes or until the onion begins to brown.

8. Cook for about ten minutes, stirring occasionally.
9. Serve the chicken chilli with sour cream and chopped red onion.
