Garlic Butter Mussels

- Michelle Phetlhe

After thoroughly enjoying their first time experience with mussels, maloba when I made them in tomato sauce like my mom used to, my kids have not stopped talking about them. A couple of day’s back they even cornered me into buying a bag, and for a while I didn’t get an opportunity to make them. I couldn’t tell you why I delayed so much because this dish comes together in no time at all and is far from complex.

I believe that the flavour comes from the mussels themselves and you really do not have to do much to bring the dish together.

Garlic, butter and lemon are a holy trinity of seafood, and are a flavour combination composition that I have learnt and come to appreciate over the past few years of being intentional in the kitchen. Either by watching cooking shows and or by trying out different recipes. Having made mussels in a tomato sauce, even though everyone enjoyed them, my strong thinking was to prepare them differently.

These Garlic Butter Mussels are hard to share and full of flavour! This Garlic Butter Mussels recipe seems like it could be much harder, but it really takes less than 20 minutes to throw together!

Besides instantly feeling like you’re at a seafood restaurant without having gone anywhere.

This is a great dish to make as a treat or even as a date night with the family like we did.

It only takes a few steps to make Garlic Butter Mussels. Be sure to first clean your mussels thoroughly. Next, you heat your butter over medium to medium high heat to melt. Add your shallots (onion mix) and let become aromatic.

Add to your onions, garlic and red pepper flakes then stir a bit. Next, add your wine and bring it to a simmer. Pour in the mussels and cover to let steam for 7-10 minutes. Be sure to remove any mussels that haven’t opened. Squeeze some lemon juice on top and add some parsley.

Serve these up with your favourite pasta or a lovely bread to sop up every bit of it.
