A traditiona­l dish that comes from the Melanau people of Sarawak, this is a dish of raw fish or prawns mixed with onions, chillies, salt, vinegar and crushed peanuts. Acidic lime juice cooks the raw seafood without heat, and is also responsibl­e for the burst of flavour on your tongue. Refreshing and delicious, this is a dish that is usually eaten as an appetiser but will taste great on its own.
