Banana Bread

-

Everyone on the Internet will tell you that their banana bread recipe is the best one, but on behalf of all amateur bakers everywhere, let me assure you that this was one of the easiest. For the first time ever, my first baking attempt was a successful one, and I’ve been using this recipe (which I procured from Food.com) regularly since.

Quick note: I used Dole bananas for this recipe but have successfully used local bananas as well (adding another banana if they were particularly small).

Ingredients

½ cup butter, softened

1 cup granulated sugar

2 eggs, beaten

3 bananas, crushed

1 ½ cups all-purpose flour

1 teaspoon baking soda

½ teaspoon salt

½ teaspoon vanilla (optional)

Directions

1. Preheat oven to 350F/180C

2. Cream together butter and sugar, and then add eggs and crushed bananas

3. Combine well

4. Sift together flour, baking soda and salt and then add to creamed mixture

5. Add vanilla

6. Mix until combined (do not overmix)

7. Pour into greased and floured loaf pan

8. Bake for 55 minutes

Tweak it: Add powdered cinnamon to the mixture, then some chopped walnuts or chocolate chips.
