Last year, the Song of In­dia in Sin­ga­pore be­came South­east Asia’s first and only In­dian restau­rant to be awarded a Miche­lin star. Manjunath Mu­ral hopes that his mod­ern take on In­dian food can help el­e­vate his coun­try’s cui­sine to a point where it is re­spected on the same level as haute French gas­tron­omy.
