STEVEN HALCROW’S FAVOURITES

KHMER DISH

Nom ban chok is a great dish. It’s fresh and light, yet still feels substantial. Plus it has all the main elements of Khmer food in one bowl. The first time I ate it, I remember thinking that the medley of flavours was unique and not like

anything I had tasted before.

RESTAURANT IN PHNOM PENH

Labaab. I was taken there by a friend and I liked the fact that it was contemporary but not trying too hard to be overly innovative or over the top in the presentation. It is just nicely prepared but authentic-tasting food served with an attention to detail that indicated

great care during preparation.

INGREDIENT

Fresh coconut milk is a great thing to cook with, especially in curries. Back home I was so used to canned stuff, but I love the fact that they are squeezing it right in

front of you over here.
