Cider was pop­u­lar among early set­tlers in Canada, but it lost ground to beer, then went through a dark age of mass pro­duc­tion in the 1970s. Thank­fully, cider is back, and Clos Sarag­nat in Fre­lighs­burg, Que­bec, makes some of my favourites – they use indige­nous ap­ple va­ri­eties that are packed with flavour.
