THIS YEAR’S SEARCH FOR THE country’s choicest rookie restaurants took our critic on a 12,811-kilometre odyssey. She hopped from a former biker bar – revamped and resplendent in velvet and marble – to a colossal barn with a dining room where the hayloft should be. She ate feathery gnocchi to synth-pop, fatty lamb roast to soul funk and ham-studded terrine to the tune of a Quebec fiddle. She let charming servers tempt her with tiramisu and sundaes. She drank 48 glasses of biodynamic wine. And at the end of her month-long, ridiculously plum journey, it came down to 10 standout spots – restaurants where you can show up after a long day, or a longer flight, and discover food that’s inventive, unforgettable and mind-bogglingly good.
