The flavours of lemon, garlic and thyme match well with almost any meat or fish. Marinate 500 g (1 lb) shrimp, chicken, pork or beef for 20 minutes then grill.
3 strips lemon peel
Juice of 1 lemon (about ¼ cup)
1 large garlic clove, smashed and peeled 3 large sprigs fresh thyme
Combine marinade ingredients in a zip-lock bag or shallow dish, bashing the lemon peel, garlic and thyme lightly with a spoon. Add meat or shell-on shrimp and marinate at room temperature for 20 minutes.
