Bourbon? Bring it!
deduce comes from the vanilla liqueur. The savoury bourbon sour is amazing and I peg it on the mustard. It’s a subtle, bracing flavour whose addition elevates the drink to star status.
Other bourbon cocktails include a Boulevardier, which is like a Negroni with bourbon instead of gin, and the popular Black Manhattan first featured at Model Milk. There are other non-bourbon classics such as the Sidecar and Tom Collins. If you just can’t get your head around bourbon or spirit-forward sips like the Night Moves (see recipe), there are beer and vodka cocktails, too — bartenders can even make your favourite classic, such as a Moscow Mule, with bourbon (instead of vodka).
The Concorde Group came under fire when the Bourbon Room first opened last May. Some people felt the bar was trying to be elitist, but Phipps says that was never the intent. The aim with this niche lounge is to encourage people to try inventive cocktails and sip flights of bourbon in a sophisticated space. To make the concept work you really need the right mix of people — beer-swilling partiers who ogle the art are kind of a mood-killer.
Phipps hopes to achieve the right equilibrium in 2014. Watch for a dedicated whiskey night where people can taste their way through the bourbon selection. As well, the Bourbon Room is looking at hosting cocktail classes where budding home bartenders can learn how to make their favourite classics while gaining the confidence to invent their own creations.
