de­duce comes from the vanilla liqueur. The savoury bour­bon sour is amaz­ing and I peg it on the mus­tard. It’s a sub­tle, brac­ing flavour whose ad­di­tion el­e­vates the drink to star sta­tus.

Other bour­bon cock­tails in­clude a Boule­vardier, which is like a Ne­groni with bour­bon in­stead of gin, and the pop­u­lar Black Man­hat­tan first fea­tured at Model Milk. There are other non-bour­bon clas­sics such as the Side­car and Tom Collins. If you just can’t get your head around bour­bon or spirit-for­ward sips like the Night Moves (see recipe), there are beer and vodka cock­tails, too — bar­tenders can even make your favourite clas­sic, such as a Moscow Mule, with bour­bon (in­stead of vodka).

The Con­corde Group came un­der fire when the Bour­bon Room first opened last May. Some peo­ple felt the bar was try­ing to be elit­ist, but Phipps says that was never the in­tent. The aim with this niche lounge is to en­cour­age peo­ple to try in­ven­tive cock­tails and sip flights of bour­bon in a so­phis­ti­cated space. To make the con­cept work you re­ally need the right mix of peo­ple — beer-swill­ing partiers who ogle the art are kind of a mood-killer.

Phipps hopes to achieve the right equi­lib­rium in 2014. Watch for a ded­i­cated whiskey night where peo­ple can taste their way through the bour­bon se­lec­tion. As well, the Bour­bon Room is look­ing at host­ing cock­tail classes where bud­ding home bar­tenders can learn how to make their favourite clas­sics while gain­ing the con­fi­dence to in­vent their own cre­ations.
