From classics to something new
During Tony Conigliaro’s seminar about developing original drinks, one thing became clear: the London-based cocktail guru is one part mad scientist and one part creative genius.
Conigliaro’s company, The Drink Factory, has a staff dedicated to testing out bespoke ingredients and new flavour combinations.
Once you get good at making some of your favourite classics, play around, says Conigliaro. He demonstrated how via his delicious Spitfire cocktail. Going off a Boston Sour recipe, he subbed in cognac for whiskey, and then added peach liqueur and white wine to give the drink summersipping appeal.
When asked if he hopes to create a cocktail that will be “the next big thing” Conigliaro answered sagely: “That’s not the world we live in anymore. Everything is broken down into little pieces.”
