Dur­ing Tony Conigliaro’s sem­i­nar about de­vel­op­ing orig­i­nal drinks, one thing be­came clear: the Lon­don-based cock­tail guru is one part mad sci­en­tist and one part cre­ative ge­nius.

Conigliaro’s com­pany, The Drink Fac­tory, has a staff ded­i­cated to test­ing out be­spoke in­gre­di­ents and new flavour com­bi­na­tions.

Once you get good at mak­ing some of your favourite clas­sics, play around, says Conigliaro. He demon­strated how via his de­li­cious Spit­fire cock­tail. Go­ing off a Bos­ton Sour recipe, he subbed in co­gnac for whiskey, and then added peach liqueur and white wine to give the drink sum­mer­sip­ping ap­peal.

When asked if he hopes to cre­ate a cock­tail that will be “the next big thing” Conigliaro an­swered sagely: “That’s not the world we live in any­more. Ev­ery­thing is bro­ken down into lit­tle pieces.”
