I first wrote about bit­ters — the “salt and pep­per” of a cock­tail — in 2012, when bit­ters started dash­ing in to cock­tails around town. They’re still go­ing strong, says Peter Hunt, whose Vic­to­ria Spir­its makes Twisted & Bit­ter bit­ters in or­ange, rose­mary and grape­fruit, and black pep­per flavours.
