Peach Julep

5 to 6 mint leaves 1/4 oz fresh lime juice 1/4 oz honey syrup* 6 to 7 heavy dashes Fee Brothers Peach Bitters (available at Silk Road Spice Merchants) 1 1/2 oz Maker’s Mark bourbon In a chalice or julep cup, add mint leaves, lime juice, honey syrup and bitters. Turn gently with a muddler to bruise the mint and release its oils. Add 1 oz of the bourbon. Fill half the cup with crushed ice. Stir 10 times to bring up the mint and co-mingle the flavours. Fill to top with crushed ice, then add the last of the bourbon. Add a crown of mint as a garnish, insert a straw and serve.

*To make the honey syrup, heat equal parts honey and water in a saucepan until the honey has dissolved. Cool and refrigerat­e.
