Morsels make your mouth water
These onion, bacon and cheddar bites are great snacks for holiday entertaining.
With preparation time of just 15 minutes and the same amount in the oven, they are also quick to prepare. Try them out at your next party.
Savoury Onion, Bacon and Cheddar Bites
1 3/4 cups (425 mL) all-purpose flour 2 tsp (10 mL) baking powder 1/2 tsp (2 mL) each salt and pepper 2 eggs 1 cup (250 mL) whole milk 4 slices bacon, cooked and crumbled 1 sweet red pepper, finely chopped 1 cup (250 mL) shredded cheddar cheese 1/2 cup (125 mL) minced red onion
Topping
1/4 cup (50 mL) sour cream 1/2 tsp (2 mL) hot sauce Minced fresh parsley and chopped sweet red pepper (optional) In a small bowl, whisk together flour, baking powder, salt and pepper. In a large bowl, whisk eggs until frothy; whisk in milk.
Fold in flour mixture, stirring gently to combine.
Fold in bacon, red pepper, cheese and onion.
Spoon a heaping 15 ml (1 tbsp) into well-greased mini-muffin cups.
Bake in a 450 F (230 C) oven until golden and puffed, about 15 minutes. Let cool on rack.
To serve, cut each in half diagonally and arrange on lettuce-lined platter.
Serve with small bowl of sweet red chili sauce for dipping.
Topping: In a small bowl, mix together sour cream and hot sauce. Spoon about 1/2 tsp (2 mL) topping onto each bite. Sprinkle with parsley and red pepper, if using. Makes two dozen. Nutrition information per serving (1 bite): 80 calories; 3 grams fat; 9 g carbohydrate; 3 g protein.
