EGGS BREAK OUT OF THEIR SHELL

Chef Lynn Crawford and Egg Farmers team up to create some tasty summertime fare

One of this summer’s top food trends is shared plates.

Shared plates are particular­ly popular as an after-work snack, to be enjoyed in lieu of a full meal. It’s an emerging trend that is appealing to everyone from baby boomers to millennial­s. They’re now a menu option available many top restaurant­s and bars.

Celebrity chef Lynn Crawford has teamed up with Egg Farmers of Canada to create some ‘eggcellent’ summer recipes, which are ideal for enjoying in an outdoor setting.

“This summer, I’m choosing to celebrate the season with the Egg Farmers of Canada and give Canadians a fun opportunit­y to embrace the casual summertime meals with delicious recipes using eggs,” Crawford says.

To encourage the public to share their favourite egg recipes online, Egg Farmers of Canada has created the hashtag #summerside­up.

“It’s a huge family of friends. It’s all about that this summer,” Crawford says.

“So break out of your shell in the kitchen and try some amazing egg-inspired recipes to celebrate the season.

“Everybody knows that eggs are one of the most versatile ingredient­s in your kitchen. And they’re one of the most complete natural foods that are available. They’re packed with 14 essential nutrients and contain so much protein that’s so good for you.”

From breakfast to dessert, in both sweet and savoury dishes, eggs are a perfect ingredient for anyone who wants to experiment, Crawford says. “They’re a natural fit.”

To get crackin’ with some creative egg-inspired recipes, Crawford recommends visiting eggs.ca.

“I contribute­d two that I thought were kind of fun, one of my summertime favourites, which is a lobster roll, and I added hard-boiled eggs to it, with lovely tarragon. They’re really yummy delicious!” she says.

“And the other recipe I gave was an egg tostada, which I think is fun for entertaini­ng in your backyard. They’re easy to make. I get rave reviews every time I make those.”

Crawford offers the following advice: “Egg cookery definitely involves timing. You can overcook an egg very quickly if you lose sight of time.”

She recommends putting half a dozen eggs in a pot of water and bringing it to a boil, then taking it off the heat and leaving it for about 10 minutes for a hard-boiled egg. Then run your eggs under cold water. The shell should now come off beautifull­y.

For more of a soft-boiled egg, leave it in the water that has come to a boil for three to four minutes.

“It’s all about having your egg timer by the pot of boiling water,” Crawford says.
