FIRE UP A GRILL

Grilled strip loins with an olive tapenade worth the cookout effort

- ATCO BLUE FLAME KITCHEN

We love cooking (and eating) outside when it’s warm and sunny. This is an easy menu for your next cookout.

Our grilled strip loins with olive tapenade take some preparation, but the moist, flavourful steaks that result are so worth it. Our homemade olive tapenade is so simple and tasty that you’ll never go back to store-bought. Here, it adds flavour to our grilled strip loins, and it also pairs well with chicken, fish or spread on bread or crackers.

You don’t need a spiralizer to make our zucchini ribbon salad — your vegetable peeler will do. The thin zucchini “ribbons” are tossed with onion, feta, olives, parsley and mint for a refreshing, Greek-inspired dish.

Quench your thirst with our delicate pineapple punch. Enjoy as is for the whole family, or spike it with a bit of rum for the grown-ups. ATCO Blue Flame Kitchen’s column on healthy eating for busy families runs Wednesdays in the food section.
