COOKING BEANS

To cook Great Northern and black beans, rinse the beans and place in a bowl with 4 cups (1 L) water and 1 tbsp (15 mL) salt. Stir and refrigerat­e overnight.

Drain and rinse the beans. Place in a pot and cover amply with water. Bring to a boil and simmer for 1 1/2-2 hours until the beans are soft. Time depends on the age of the beans. Drain when tender.
