THREE CHEESE QUESADILLA­S

Serves: 4-6 as a starter 4 oz (114 g) cream cheese

1 cup (250 mL) shredded Monterey Jack cheese

1/3 cup (80 mL) shredded feta cheese

1/2 tsp (2.5 mL) oregano, crumbled

1/4 tsp (1 mL) freshly ground pepper

1/3 cup (80 mL) chopped pitted ripe olives

2 tbsp (30 mL) chopped canned roasted red peppers

2 tbsp (30 mL) sliced green onion 5 flour tortillas (6 inch/15 cm)

1. Using medium speed of an electric mixer, beat together cream cheese, Monterey Jack cheese, feta cheese, oregano and pepper until almost smooth.

2. Stir in olives, roasted peppers and green onion.

3. Spread cheese mixture evenly over half of each tortilla. Fold tortillas in half.

4. Grill tortillas over low heat on natural gas barbecue for 2 minutes per side or until lightly browned and heated through. Cut into wedges. Serve warm.
