SUNFLOWER SEED SAUSAGE

These flavourful sunflower seed sausages are fat burning, a perfect vegan option and are delicious hot or cold! Prep: 10 minutes Cook: 15 minutes Yields: 4 Servings 3-4 tsp avocado oil

1⁄2 small to medium yellow onion chopped

1 garlic clove minced

1 1⁄2 cups raw sunflower seeds or: ( for vegan: one cup raw sunflower seed plus half cup cooked black beans)

1⁄4 sun-dried tomatoes chopped 2 tablespoon­s coconut amino’s Drops of Stevia *optional 1 teaspoon liquid smoke 1 teaspoon dried sage

1 teaspoon fennel seeds

1⁄2 teaspoon cumin

1⁄2 teaspoon paprika

Salt and pepper to taste 1. Mix together in food processor or blender on slow until like a sausage consistenc­y is obtained. Form into patties.

2. Sauté them in coconut oil. 3. Serve in collard greens with onions and bell pepper.
