Between rush-hour traffic and shuttling kids to their extracurri­cular activities, there never seems to be enough time during the week to get everything done.

These delicious one-pot recipes require minimal prep and supervisio­n so that you can make the most out of your busy weeknights without skimping on flavour.

Our baked chicken hits all the flavour notes with sweet molasses, tart lemon and savoury garlic. The rich and sticky sauce is delicious served over rice. Round out the meal with some stir-fried or steamed vegetables.

Our bean curry combines the fiery flavours of Thai cuisine with the heartiness of chili. Plump kidney beans are simmered in an aromatic stew seasoned with red curry paste, tomatoes, lime, garlic and coconut, all served over steamed rice.

Tender chicken breast marinated in lime, garlic and cayenne is baked on a bed of basmati rice steamed in coconut milk, lime, and cilantro in our Asian-inspired dinner. The chicken and rice are each infused with additional flavour as they cook together. While the dish is cooking, prepare a salad or some lightly sautéed vegetables for a complete meal.
