WAFFLES

■ 1 1/2 cups (375 ml) Pancake and Waffle Mix (recipe follows)

■ 1 cup (250 ml) water

■ 2 tbsp (30 ml) butter, melted or oil

■ 1 tsp (5 ml) vanilla

■ 1 egg, separated

■ Maple or pancake syrup

1. Place mix in a bowl. Using a spoon, make a well in centre of mix.

2. Whisk together water, melted butter, vanilla and egg yolk until blended.

3. Pour water mixture into well and stir just until combined. Do not overmix. Using medium speed of an electric mixer, beat egg white until stiff peaks form.

4. Gently fold beaten egg white into batter.

5. Cook in a preheated greased waffle iron according to manufactur­er’s instructio­ns. Serve with syrup.
