DISH: GREEN TEA NOODLES
From grassy pieces of avocado toast to luminous kale smoothies, Instagram loves all things green, and Mission Chinese Food chef Danny Bowien’s green tea noodles are no exception. Matcha powder does double duty to give the dish a unique vegetal flavour and an Instagrammable emerald hue. Ginger scallion sauce is made with olive oil, fish sauce and sugar. The taste is sweet and spicy—and the oil base prevents the wheat noodles from sticking together, for perfect photogenic form. —C.M.
INSTAGRAM EFFECT: You just can’t have enough green. Noodles are tossed in an emulsion of ginger scallion sauce, matcha and mushroom powder. Then, for more green, shavings of radish and cucumber add a dash of freshness.
