From grassy pieces of avocado toast to lu­mi­nous kale smooth­ies, In­sta­gram loves all things green, and Mis­sion Chi­nese Food chef Danny Bowien’s green tea noo­dles are no ex­cep­tion. Matcha pow­der does dou­ble duty to give the dish a unique veg­e­tal flavour and an In­sta­grammable emer­ald hue. Gin­ger scal­lion sauce is made with olive oil, fish sauce and su­gar. The taste is sweet and spicy—and the oil base pre­vents the wheat noo­dles from stick­ing to­gether, for per­fect pho­to­genic form. —C.M.

IN­STA­GRAM EF­FECT: You just can’t have enough green. Noo­dles are tossed in an emul­sion of gin­ger scal­lion sauce, matcha and mush­room pow­der. Then, for more green, shav­ings of radish and cu­cum­ber add a dash of fresh­ness.
