CHICKEN SKEWERS WITH PEANUT LIME DIPPING SAUCE

1 450 g cup smooth peanut butter cup warm water tbsp hoisin sauce tbsp grated ginger tsp lime zest tbsp lime juice boneless skinless chicken thighs, cut in 1-inch cubes pinch each salt and pepper

Preheat oven to broil. Grease or line baking sheet with foil.

In bowl, stir together peanut butter, ¼ cup warm water hoisin sauce, ginger, lime zest and lime juice until smooth; set aside.

Sprinkle chicken with salt and pepper. Thread onto metal or soaked wooden skewers. Broil until juices run clear when chicken is pierced, about 6 minutes. Serve with peanut butter mixture.
