¾ cup wheat berries, rinsed

1 cup chopped fresh cilantro

1 cup chopped English cucumber ½ cup each chopped fresh parsley and fresh mint green onions, chopped plum tomatoes, seeded and chopped extra-virgin olive oil grated lemon zest 3 2

3 tbsp ½ tsp 3 tbsp lemon juice

½ tsp ground sumac

¼ tsp each salt and pepper

675 g bone-in skin-on chicken thighs 675 g bone-in skin-on chicken drumsticks ½ tsp ground sumac

¼ tsp each salt and pepper

1 tsp olive oil

Preheat oven to 400°F.
