SPICY CHIPOTLE CHICKEN PIZZAS
MAKES 4 SERVINGS HANDS-ON TIME 15 MINUTES TOTAL TIME 15 MINUTES
1 cup prepared pizza sauce or Tomato Pizza Sauce
(see recipe, below) canned chipotle pepper in adobo sauce
4 whole wheat pitas
1 cup shredded cooked chicken
1 cup shredded Monterey Jack cheese half sweet red pepper, thinly sliced 2 green onions, chopped
Preheat oven to 450°F.
In food processor, purée pizza sauce with chipotle pepper until smooth. Arrange pitas on baking sheet; spread sauce over pitas. Top with chicken, Monterey Jack, red pepper and green onions.
Bake until cheese is bubbly and golden, about 10 minutes. 1
