Ba­con and onion cheese balls

Pre­pare these one-bite ap­pe­tiz­ers ahead of time and they’ll sit con­ve­niently in your re­frig­er­a­tor un­til guests ar­rive. The coat­ing of nuts over the creamy cheese will keep your guests’ hands clean as they min­gle.

5 strips sodium-re­duced ba­con

½ cup nat­u­ral (skin-on) al­monds, toasted 1 pkg (300 g) soft goat cheese (chèvre) 2 green onions, finely chopped

1 clove gar­lic, finely minced

½ tsp pep­per

In non­stick skil­let, cook ba­con over medium heat un­til crisp, about 5 min­utes. Us­ing slot­ted spoon, trans­fer to pa­per towel–lined plate to drain. Chop into ¼-inch pieces.

Mean­while, in food pro­ces­sor, pulse al­monds un­til coarsely ground. Trans­fer to shal­low bowl.

In large bowl, com­bine ba­con, goat cheese, green onions, gar­lic and pep­per. Roll by scant 1 tbsp into balls. Roll in al­monds, press­ing to ad­here. (Make-ahead: Re­frig­er­ate in air­tight con­tainer for up to 24 hours.) per piece: about 61 cal, 4 g pro, 5 g to­tal fat (2 g sat. fat), 1 g carb (trace di­etary fi­bre, trace sugar), 9 mg chol, 60 mg sodium, 50 mg potas­sium. % RDI : 3% cal­cium, 3% iron, 4% vit A, 1% fo­late.
