Re­heat left­over vegetable stew. Spread ⅔ cup stew over thick puffed pita bread, leav­ing ½-inch (1 cm) bor­der. Dot with goat cheese or feta cheese. Bake in 400°F (200°C) oven un­til cheese be­gins to brown, about 12 min­utes. Sprin­kle with fresh mint, and chopped ice­berg let­tuce, tomato and cu­cum­ber. Driz­zle with tahini or yo­gurt thinned with lemon juice.
