Bacon Onion Grilled Cheese

Hands-on time: 25 minutes Total time: 25 minutes Makes: 4 servings Onion and bacon can amp up any sandwich, and they take only a few minutes to cook. For easy grilling, choose a dense bread, because it won’t fall apart easily when turned.

1 small sweet onion, cut in scant

½-inch (1 cm) thick rounds 1 tbsp olive oil Pinch each salt and pepper 4 slices back bacon 8 thick slices multigrain bread 4 slices Cheddar cheese 1 tomato, thinly sliced

Brush onion with 1 tsp of the oil; sprinkle with salt and pepper. Place onion and bacon on greased grill over medium-high heat; close lid and grill, turning occasional­ly, until bacon is warmed through, about 4 minutes, and onion is softened, about 7 minutes.

Top 4 of the bread slices with Cheddar cheese, bacon, tomato and onion. Sandwich with remaining bread.

Brush both sides of sandwiches with remaining oil. Return to grill over medium heat; grill, covered and turning once, until cheese is melted, about 5 minutes.

CHANGE IT UP Apple and Gruyère Grilled Cheese Omit bacon, Cheddar cheese and tomato. Spread Dijon mustard on half of the bread slices; top with sliced apple, Gruyère cheese, grilled onion and remaining bread.
