FRENCH 75 COCKTAIL

Simple Syrup ½ cup water ½ cup granulated sugar

8 strips lemon zest ¾ cup lemon juice (2 to 3 lemons) ½ cup gin 1 750 ml bottle chilled sparkling dry white wine Simple Syrup In saucepan, stir together water and sugar. Bring to boil; cook until sugar is dissolved, about 2 minutes. Remove from heat; let cool for 10 minutes. Refrigerat­e until chilled, about 15 minutes.

In 2-cup liquid measure, stir together lemon juice, gin and Simple Syrup until combined. Divide among 8 champagne flutes (about ¼ cup each). Top with sparkling wine; garnish with zest.
