MARINATED GOAT CHEESE

1 8 oz log creamy goat cheese, cut crosswise into 10 slices 6 small fresh rosemary sprigs 6 small fresh thyme sprigs 2 tsp each crushed black and pink peppercorns 1½ cups olive oil Carefully distribute goat cheese slices among sterilized glass jars.
Slide sprigs of rosemary and thyme around inside edge of jars. Sprinkle with peppercorns. Pour in oil, ensuring that cheese and herbs are completely submerged. Seal jars; refrigerate for at least 1 week. (Can be refrigerated for up to 2 weeks.)
Note: Ensure that cheese and herbs are always immersed in oil; top up with oil if needed.
