RÖSTI WAFFLES WITH HERB CHEESE SPREAD & SMOKED SALMON

1 ½ cups packed peeled and grated yellow potatoes

1 egg

⅓ cup all-purpose flour

¾ cup finely grated Parmesan cheese

2 tbsp finely chopped shallot salt and pepper

Herb Cheese Spread

¼ cup cream cheese, softened

¼ cup plain soft goat cheese, softened

¼ cup 35% whipping cream

1 tbsp chopped fresh chives salt and pepper

Toppings

90 g to 120 g sliced smoked salmon

2 tbsp chopped fresh dill

1 tbsp capers, rinsed, drained and chopped lemon wedges

Rösti Waffles Grease and preheat waffle iron. Using clean tea towel or cheeseclot­h, squeeze potatoes to remove as much liquid as possible. Place potatoes in large bowl. Add egg, flour, Parmesan and shallot; season with salt and pepper. Mix until combined.

Place one-quarter of potato mixture on each of waffle iron compartmen­ts. Close lid and cook until potatoes are tender and waffles are golden brown, 8 to 10 minutes.

Herb Cheese Spread Meanwhile, in bowl, using spatula, mix cream cheese, goat cheese and whipping cream until smooth. Mix in chives. Season with salt and pepper.

Toppings Place waffles on serving plate. Top each waffle with smoked salmon and generous dollop of Herb Cheese Spread. Sprinkle with dill and capers; serve with lemon wedges.
