AIR-FRYER ARANCINI WITH HOMEMADE RANCH DIP

MAKES 12 TO 14 ARANCINI HANDS-ON TIME 15 MINUTES TOTAL TIME 40 MINUTES

Homemade Ranch Dip

1 tbsp unsalted butter

1 leek (white and pale green parts

only), finely chopped

1 clove garlic, finely chopped

3/4 cup nonfat Greek yogurt

1/2 cup mayonnaise

1 tsp onion powder zest and juice of 1/2 lemon

1/3 cup 2% milk

2 tbsp chopped fresh chives

2 tbsp chopped fresh tarragon salt and pepper

Air-fryer Arancini

2 cups cold leftover risotto

1/2 cup Italian-style dried bread crumbs 1/2 ball fresh mozzarella, cut in small

cubes (from 250 g ball)

1 cup all-purpose flour salt and pepper

2 eggs, lightly beaten

1 cup panko bread crumbs vegetable cooking spray

Homemade Ranch Dip In skillet, melt butter over medium-low heat; add leek and cook, stirring often, until very tender, 10 to 15 minutes. Stir in garlic; remove from heat. Transfer mixture to blender; add yogurt, mayonnaise, onion powder, lemon zest and juice, milk, chives and tarragon. Season with salt and pepper. Pulse until smooth and pale green in colour, 20 to 30 seconds. Set aside in refrigerat­or.

Air-fryer Arancini In large bowl, mix risotto with Italian bread crumbs. Using hands, form 12 to 14 2 tbsp balls. Place each ball in the palm of your hand and flatten lightly, press one mozzarella cube into centre and reform ball around the cheese. Place balls on plate; set aside in refrigerat­or.

In bowl, season flour with salt and pepper. Place eggs in second bowl; whisk in salt and pepper. In third bowl, season panko with salt and pepper.

Preheat air fryer to 400°F. Working one at a time, dredge reserved rice balls in flour, then eggs, then in panko. Spray balls and air-fryer basket with cooking spray. Place balls in single layer in airfryer basket. (If all don’t fit, cook in two batches.) Cook, turning halfway through cooking time, until crispy and golden brown, 15 to 20 minutes. Serve with reserved Homemade Ranch Dip. PER EACH OF 14 ARANCINI about 215 cal, 7 g pro, 10 g total fat (3 g sat. fat), 24 g carb (1 g dietary fibre, 2 g sugar), 40 mg chol, 250 mg sodium, 1.6 mg iron.
