Mediterran­ean Frittata Muffins

Ingredient­s

8 oz. sausage (remove casings)

2 cups broccoli, finely chopped

1 cup cheddar cheese, shredded ¼ cup sun-dried tomatoes soaked in oil, finely chopped

1 tsp dried basil ½ tsp dried oregano

Freshly ground salt and pepper to taste 10 large eggs

Directions

1. Preheat oven to 350 F. Lightly grease a 12-tin muffin tray, or line with silicone muffin cups. 2. Remove the casing from the sausages and cook in a skillet over medium heat. Break sausage up with spatula as it cooks, to create small pieces.

3. In a large mixing bowl, combine the cooked sausage, broccoli, cheese, tomatoes, basil, oregano, pepper and salt.

4. In a medium bowl, whisk the eggs. Pour into the broccoli mixture and mix thoroughly.

Divide the mixture evenly among the muffin cups, and top with the chives.

5. Bake for 30 minutes, or until the eggs are set and a toothpick inserted in the centre comes out clean.
